We Made Three Yummy Lemon Square Inipit Desserts! There's #NoLimitWithInipit!

Lemon Square Inipit is one of my family's favorite snacks. It's always included in our grocery shopping. We resist this sweet, tasty, and soft pastry! We're so happy that Lemon Square has created this which tastes similar to the original Inipit that has been originated in Malolos, Bulacan.

Aside from the original inipit flavor, CUSTARD, Lemon Square launched more flavors to indulge with: UBE-PASTILLAS DE LECHE, QUESO, PANDAN, CHOCOLATE, and LEMON.

What is Inipit? "Inipit is a type of cake made out of two slices of sponge cake filled with a potato custard in the middle. The name inipit means “pressed” in English defining the way the middle layer is sandwiched between two slices of sponge cake, a popular pasty in the Bulacan region and its creation was credited to Salome P. De Ramos of Malolos during the 1940’s." (Courtesy of http://www.angsarap.net/2013/06/26/inipit/)

The original Inipit was introduced to us by my uncle during the early 90's when he used to work as a bank manager in Malolos, Bulacan. We loved the pastry ever since!

When I saw Nuffnang Philippines #NoLimitWithInipit: Make Your Own Lemon Square Inipit Dessert Contest, I was so impressed with the concept of the campaign. Lemon Square Inipit is already good when I eat it on its own and converting or upgrading it into another dessert makes it yummier and tastier for sure. Joining this is also another way of teaching my kids kitchen skills and stimulating their creative juices as well.

So we came up with three desserts out of one pack of Assorted Lemon Square Inipit. We wanted to maximize the use of all flavors and also the ingredients that were already available in our fridge and pantry. We also thought of Filipino dessert inspirations to make this possible to match Inipit being a Filipino dessert too.

In one pack of Lemon Square Assorted Inipit, we got the following flavors, 22 grams each: 2 pieces-LEMON, CHOCOLATE, UBE-PASTILLAS DE LECHE and CUSTARD; 1 piece- QUESO and PANDAN (Total of 10 pieces)

Without further ado, here are the three desserts that we made:

Inipit Halo-Halo

Dessert Inspiration:  Pinoy Halo-Halo

"Halo-halo (Tagalog: [haˈlo-haˈlo], 'mixed together') is a popular Filipino dessert with mixtures of shaved ice and evaporated milk to which are added various boiled sweet beans, jello and fruits. It is served in a tall glass or bowl.
Ingredients include boiled kidney beans, garbanzos, sugar palm fruit (kaong), coconut sport (macapuno), and plantains sweetened with sugar, jackfruit (langkâ), gulaman, tapioca, nata de coco, sweet potato (kamote), cheese, pounded crushed young rice (pinipig). Most of the ingredients (fruits, beans, and other sweets) are first placed inside the tall glass, followed by the shaved ice. This is then sprinkled with sugar, and topped with either (or a combination of) leche flan, purple yam (ubeng pula), or ice cream. Evaporated milk is poured into the mixture upon serving."- wikipedia-org (Photo Credit: www.ferna.com.ph)

Ingredients

2 pieces Custard Lemon Square Inipit
2 pieces Ube- Pastillas de Leche Lemon Square Inipit
1 piece Pandan Lemon Square Inipit
1 piece Queso Lemon Square Inipit
Nata de Coco
150 ml chilled all-purpose cream
50 ml condensed milk
4 tablespoons Nata de Coco syrup

Additional Materials

mason jar
spoon
fork
bread knife

Procedure

1. Mix condensed milk, nata de coco syrup, and chillled all-purpose cream. Set aside.
2. Cut all Lemon Square Inipit Variants into half to make them easier to put in the mason jar. Make sure to leave half of the Queso Variant for topping.

3. Arrange the ingredients alternately until you reach the top of the mason jar: CUSTARD INIPIT- cream/condensed milk/nata de coco syrup mixture-NATA DE COCO-PANDAN INIPIT- cream/condensed milk/nata de coco syrup mixture-NATA DE COCO- UBE INIPIT- cream/condensed milk/nata de coco syrup mixture-NATA DE COCO-mashed QUESO INIPIT- NATA DE COCO

4. Chill and serve.

Oh my! This Inipit Halo-Halo tasted like the Filipino Halo-Halo that we could purchase from our favorite Filipino restaurants. The assorted Inipit flavors that we used mimicked the taste of the ingredients of the real Halo-Halo! It was refreshingly good, promise!

Note:

- Chill the all-purpose cream at least 24 hours before mixing it with condensed milk and nata de coco syrup. The mixture is stiffer which makes it easier to pour and layer with the rest of the ingredients.
- Make sure to press Inipit on the mason jar wall to make the layering more obvious which makes it more appetizing.
- Chilling the Inipit Halo-Halo longer before serving makes it taste more refreshingly good!

2     Pastillas de Inipit

Dessert Inspiration: Pastillas de Leche

"Pastillas de leche are sweet milk candies that are usually served for dessert. An authentic recipe will require the use of Carabao’s (water buffalo) milk and cooking is also necessary."- Panlasang Pinoy (Photo Credit: www.filipinow.net)

Ingredients

2 pieces LEMON Lemon Square Inipit
4 tablespoons condensed milk
2 tablespoons white sugar for coating

Additional Materials

small mixing bowl
fork
spoon
small serving dish or saucer
toothpicks (optional)

Procedure

1. Mash LEMON INIPIT into crumbs.

2. Add condensed milk and fold until paste-like but please don't overdo it.

3. Get 1/2 teaspoon of the mixture and form into balls.
4. Roll each ball in white sugar.
5. Serve the pastillas balls with toothpicks.

Mom was so happy with this Pastillas de Inipit. She told me that it tasted like the classic Pastillas de Leche. The lemon flavor of Lemon Inipit mimicked the "Dayap" or lime, the resident ingredient of Pastillas de Leche. In our set of ingredients, we only made 7 Pastillas de Inipit balls. Mom requested for another batch kasi bitin daw! No sweat because cooking wouldn't be required to make this!
