Hubby's Version of My Pinoy Kusina's Pork Binagoongan

We love Pork Binagoonan! Who can resist this tasty authentic Filipino dish that is best served with hot steamed rice? The taste of the meat blends well with sauteed tomatoes and shrimp paste. The hint of pepper and chili gives it a kick that tickles the taste buds!

This dish tastes good when cooked properly. My Pinoy Kusina's recipe is the one we prefer and recommend. Here it is, with a little improvisation by Hubby!

Ingredients

2 lbs Pork, cubed
1 tbsp Garlic, minced
5 tbsp vinegar
1 cup onion, chopped
1 cup tomato, chopped
1 pc chili (banana pepper, jalapeno, or long chili pepper), sliced
1/2 cup shrimp paste
3-5 pcs dried bay leaves
1 tbsp whole pepper corn
24 ounces water
salt and pepper

Procedure

1. In a pot, pour-in the water and let it boil.

2. Add pork, vinegar, and dried bay leaves and simmer for 35 minutes or until meat is tender.

3. Remove the meat from the pot separating it from the liquid and other ingredients. Set aside.

4. In a separate pan, saute garlic, onion, tomato.

5. Add shrimp paste and simmer for 5 minutes (more time is needed for raw shrimp paste).

6. Put the pork in and cook for 7 minutes. Be sure to mix all the ingredients well.

7. Add chili and simmer for 3 minutes.

8. Add salt and pepper to taste.

9. Serve hot. Share and Enjoy!

 Hubby's Version

Hubby cut the pork into small pieces to make the cooking process quickly. After boiling the pork slices, he seared them first until the oil went out before doing Step 4. Our family wanted the meat seared/fried well-done. He used Barrio Fiesta Regular Sauteed Shrimp Paste instead of raw shrimp paste. He skipped Step 6. Instead of salt, he added sugar to make the taste appealing to our kids. He also added Kangkong (Swamp Cabbage) to make it healthier. He didn't slice the green chili to avoid making it too spicy

You may adjust the flavor according to your preference.

This is a must-try! It's so easy to do at masarap pa!

  2. ang sarap naman nyan SJ! Ang tagal ko ng di kumakain nyan, years na din. I'm allergic to bagoong kasi and shrimp, kaya nakaka inggit talaga pag may kumakain ng ganyan. Kaya pag kumakain ako karekare, walang lasa kasi walang bagoong na kasama, hehe!

    1. Oh, so sad naman, Mary Joy. Lahat pala ng masarap bawal sa'yo. Have you tried desensitization? Kahit unti-unti lang na exposure sa allergen para masanay ang body mo? Hope that someday you'll be able to enjoy eating bagoong and shrimp. :)
